Lincoln Popup Dinner Recap: Vegan Gourmet at Parisian Laundry

Lincoln Vegan Popup Dinner at Parisian Laundry by Stephanie Audet and Alexandre PuloIs Montreal a pop-up restaurant city? I know a lot of the population is into one-night-only affairs, but how many multi-course meals with wine pairings at cool places that may or may not otherwise be restaurants do we host in MTL? Lincoln thought we should have a couple more. Yes, the car company. Pre-dinner test drives of their new Lincoln MKZ and hybrid vehicles followed by gastronomic meals at restaurants Helena, Apollo, Chez L'Épicier, and finally one hosted by the vegan chef with wanderlust, Stéphanie Audet, and the chef of Restaurant Vallier, Alexandre Pulo. With Audet's capable friends both helping in the kitchen and manning the floor, the meal was pro all around. Here's how it all went down...

First we signed up to run a new car around the block. That was before the gin and kombucha cocktails, of course. Sync your phone to dash and a minute later you're cruising to your tunes in St-Henri. In the spirit of keeping the vegan carbon footprint small, there's a fuel economy indicator that sucks all the juice out of your accelerator but hopefully saves the world one responsibly non-revved engine at a time. The hybrid does a much better job of that than the non-hybrid.

Then the food: First, a cocktail hour with deep-fried sweet potato chips topped with cashew cream and roasted pine nuts, and a thick fried polenta square with arugula pesto and a bruschetta of Lufa Farms tomatoes.

From the swanky downstairs lounge area, the crowd moved to the lofty, open dining space upstairs. Biodynamic white wine from Les Pierres Plates and jerusalem artichoke soup with lemony portobello tartare and cilantro oil. The main course: sesame and miso-glazed squash with quinoa and tahini, a little garnish of blue potatoes with basil and radishes, a tomato coulis, and an incredible, peppery biodynamic red wine from Domaine de la Montagnette. I'll be looking for that one at the SAQ. Rézin, a local wine importer, brings it in. I'll also be looking for it at the RASPIPAV private importation wine salon. Syrah, Mourvèdre, and ganache are a wicked combination in this 2012 Villages Signargues from the Cotes du Rhone.

Dessert poached pear with vegan chocolate and caramelDessert: vanilla-poached pears with chai tea cream, date caramel, candied walnuts, and chocolate shavings.
